When I was a kid one of our favorite places to eat was Big Cheese Pizza. In fact later it was my first REAL job. Of course that's another story. Back to this one...Big Cheese Pizza had the biggest salad bar in Muskogee and I VIVIDLY remember my mom getting this "stuff" on her salad that looked UNedible to me. Why would anyone want to eat something called "Tabouli"? Not me, no how, no way, Never, Never, Never!!! Well apparently it is something that comes with age; I'm not sure, but now I LOVE tabouli. I love the way it looks! I love the way it smells, and I LOVE that it looks like summer in a bowl! I am posting my recipe, but please know this how I do things in Candy's Kitchen...Please feel free to take creative license to things differently in ________________(your name here)'s Kitchen!! Tabouli ala Candy's Kitchen
Here's what you need...tabouli mix(I just use the bulgar not the spices),roma tomatoes,parsley,cucumber,bell pepper,green onions,lemon juice,olive oil, salt
Dump the bulgar (that's the grainy stuff) in a bowl and cover with 1 cup boiling water and sit for about 20 minutes
I just rough chop the tomatoes and dump them in
Now proceed to add all the green stuff chopped up
Now stop for a moment and look at this super cute babygirl staring up at me (I mean how do I get anything done with THAT looking at me??) Yummy!
OK back to adding the green stuff
Stop again, and tell the super cute baby girl to get out of my trash sack!!
After putting the final green stuff in, toss it all together and add about 1/4 cup olive oil and at least 1/2 cup lemon juice, and salt. I don't really measure these last things. I always say err on the side of more lemon juice. Toss, and let sit for at least 2 hours.
There you have it: Big ol bowl of summer!
